Spring Chai Latte

Makes 6 cups
1 can evaporated milk
2 Chai teabags or Chai liquid (A well known coffee bar, Starbucks,  sells a good mix)
2 Cups water
2 teaspoons sugar
1/4 teaspoon real vanilla extract
Nutmeg
Chocolate

Chill 1/3 of the milk in the fridge. Combine remaining milk, tea bags or Chai mix and water in a saucepan over medium heat, simmer for 3 minutes.
Beat refrigerated milk with sugar and vanilla until thick and frothy.
Strain tea into warmed mugs and spoon froth
over top. Sprinkle with nutmeg and shaved chocolate

India Chai Hint:

Use strong black tea as your base.  This way the tea flavour does not get lost in the spice mix. Assam works well; Lighter teas like green teas and Darjeeling do not stand up well to strong spices.

Chai Masala Recipes

  Perhaps it is a bit rigid to even think of Chai masala "recipes" since individual taste and creativity are what makes this drink so much fun.  But, there are few key ingredients, and there is a basic method.

  The Ingredients

TEA  Black or other strong tea is best as your "base" flavor;
SWEETENER  This can be various sugars, molasses, honey or another sweetener of your choice;
MILK  Some may prefer something a bit more fattening like cream or condensed milk;
SPICES  -  Your choice

The Basic Method

Chai can be prepared in many ways, but a typical sequence might include boiling the chai masala spice mixture with the sweetener, adding tea and milk and bringing back to a boil, and then allowing the tea mixture to steep for several minutes. (Source: Wikipedia)
